The book, “The Baker’s Challenge: Recipes for Happiness,” about Youji Tamura of boulangerie deRien, a popular bakery that has been read for years on Yahoo! I’ve been working on the book since 2019, and it’s been two years in the making. It has been over two years since I started working on the book in 2019. What was the experience of Tamura-san, who used to throw away a garbage bag full of bread, to stop throwing away even a single loaf?
